Spicy Pumpkin Soup Recipe :
Ingredients for the Soup recipe:
4 Tablespoons of unsalted butter
1/2 Tsp of ground coriander
2 medium sized yellow onions ( have ready the onions chopped )
2 Tsps of minced garlic
1/4 Tsp crushed red pepper ( even lower as per your choice )
2 Tsps of curry powder
brown sugar 1/2 cup
heavy cream 1/2 cup
optional – Pinch ground cayenne pepper
3 (around 450ml) cans pumpkin or chopped roasted pumpkins 6 cups
chicken broth 5 cups (we can also go for vegetable broth in case of veg pumpkin soup)
2 cups of milk
Method :
Take a 4-quart saucepan , In a medium to high heat Melt the butter .
Now Add onions + garlic to it and cook, stir often, it takes more or less 4 mins to get soft ( until softened ) .
Now add spices and stir the mixture again ( 1 min ).
Add pumpkin and chicken broth or veg broth ( 5 cups ) – mix well . make this reach boil state and then reduce heat , sim level for 10 to 15 mins.
Now according to volume of your lender or food processor move the soup at once or 2 3 times. have the jar tightly covered and blend it .
After that again the soup is back to saucepan now.
Add brown sugar in a low heat, mix the soup .now pour the milk slowly along with stirring job . now we can add the cream . we make ( add cream ) as per our taste .
salt is added in a similar way ( as per our taste ).
Delecious and healthy Spicy Pumpkin Soup – ready to serve .
