pumpkin soup recipe
Delicious and spicy pumpkin soup recipe : this healthy pumpkin soup takes 25mins of our time on whole ( cooking and preparation for soup ). we can have this recipe with sweet corn cakes or spring rolls . instead we can also have a pumpkin day – yes having pumpkin bread recipe with pumpkin soup ( previously i have added 14 pumpkin bread recipes and some pumpkin pie recipes too ) .
Ingredients for Pumpkin soup recipe
3 cups of pumpkin,
(peel & cut the pumpkins in half inch size )
1 onion, ( get the onions chopped aside )
2 cups of coconut milk,
a seasoning cube (veg )
1 Tbsp oil,
1 Tbsp red curry paste,
2 cups of water
salt for taste.

Method of cooking :
- Take a pot or any vessel for soup recipe – add oil and onions and fry the onions for some mins .
- Now add the red curry paste fry for some more minutes .
- Add coconut milk , pumpkin pieces , seasoning cubes & pout the 2 cups of water and stir well .
- cook in a covered state for 10 to 15mins or until the pumpkin gets tender .
- add salt as per taste and use may coriander leaves for garnishing .
- serve the soup hot
